Nestled on a bed of orzo cooked in chicken broth, this dish is incredibly flavorful. Topped with fresh herbs, kalamata olives, and crumbled feta cheese, it’s a one-pan meal that delivers a healthy, flavorful dinner that’s both simple and sophisticated.

Ingredients: 1 tbsp olive oil, 2 salmon fillets, 2 tsp dried oregano (divided), 1/2 tsp smoked paprika, 1/4 tsp lemon garlic powder, salt and pepper to taste, 1 cup orzo, 2 tbsp chopped sun-dried tomatoes, 1 cup cherry tomatoes, 1 minced garlic clove, zest and juice of 1 lemon, 2 1/2 cups low-sodium chicken broth or water, 1 tbsp chopped parsley, 1 tbsp chopped dill, 1/4 cup kalamata olives, 1/3 cup crumbled feta.

This recipe brings the drive-thru experience right into your kitchen with grilled onion perfection for all the onion lovers. Despite my usual reservations about onions, this secret menu Flying Dutchman earns a solid 8.5/10 from me. With 1 less slice of onion and buns, it’s a 10/10. 😆
This DIY In-N-Out is surprisingly simple to replicate, offering that authentic flavor without the drive-thru line. The mustard frying technique? I love it and adding it to all my burgers moving forward.

Ready to make your own? Here’s what you’ll need for 4 patties 
* 1 lb Beef (80-20)
* 2 large Onions, sliced and caramelized to perfection
* Mustard, enough to lightly coat each patty
* Cheddar or American cheese
* Hot Chili Peppers 
Sauce:
* 1/2 cup Mayo
* 3 tbsp Ketchup
* 1 tbsp Yellow Mustard
* 1 tbsp Sweet Relish
* 1 tsp White Vinegar
* Salt
* 1/4 tsp Paprika
* 1 tsp Onion Powder

It’s perfect for those times when you’re not sure what to have for lunch or a relaxed brunch. Honestly it’s so tasty that I wouldn’t mind having it for breakfast and dinner every day if I could!

Imagine a baguette with Feta cheese layered with crispy Red Onions and Cucumbers juicy Tomatoes (heirloom ones are great if you can find them) bursting with flavor! Fresh Basil, a drizzle of Extra Virgin Olive Oil and a sprinkle of Flaky Salt and Pepper, Oregano and a tangy twist by adding Red Wine Vinegar.
Quick tips; Make sure to season everything use high quality ingredients and if you find onions too strong try soaking the slices, in ice water to mellow out the flavor.

I love preparing a delicious and healthy Za’atar Chicken Sheet Pan Dinner during the week. It’s inspired by middle eastern flavors and makes for a perfect weeknight meal. The best part is that it’s incredibly easy to prepare and clean up afterward. 🥗🥙 Plus it’s great, for meal prepping!

* 1 lb Organic Chicken Tenders
* 1 tbsp Za’atar 
* Juice from 2 Lemons
* 1 Shallot
* Seasonings: 1/2 tsp Salt, 1/2 tsp Pepper, 1/2 tsp Onion Powder, 1/2 tsp Garlic Powder, 1/4 tsp Turmeric
* Red Cabbage
* Broccoli 
* Carrots
* Feta 
* Pita Chips
* 1 cup Chopped Kale Leaves
* Fresh Parsley
For the Balsamic Vinaigrette Dressing:
* 1/3 cup Olive Oil
* 3 tbsp Balsamic Vinegar
* 2 tbsp Mayo
* 1/2 tbsp Dijon Mustard
* 1 clove Garlic, minced

Marinate the chicken in za’atar, lemon juice, shallot, olive oil, parsley and seasonings for 30 mins in the fridge! To prepare the grains, combine 1 cup quinoa and 1 cup rice with 3 1/3 cups of water, a pinch of salt, and a splash of olive oil. Bring to a boil, then simmer covered until fluffy, about 30 minutes. 
Then arrange the chicken and veggies on a sheet pan lined with parchment for easy cleanup. Season the vegetables with spices and a light spray of oil. Bake everything at 400°F for 20 mins.
Massage the kale leaves with olive oil. Whisk together all vinaigrette ingredients in a bowl.

For the Balsamic Vinaigrette Dressing:
* 1/3 cup Olive Oil
* 3 tbsp Balsamic Vinegar

* 1/2 tbsp Dijon Mustard
* 1 clove Garlic, minced

Marinate the chicken in za’atar, lemon juice, shallot, olive oil, parsley and seasonings for 30 mins in the fridge! To prepare the grains, combine 1 cup quinoa and 1 cup rice with 3 1/3 cups of water, a pinch of salt, and a splash of olive oil. Bring to a boil, then simmer covered until fluffy, about 30 minutes.
Then arrange the chicken and veggies on a sheet pan lined with parchment for easy cleanup. Season the vegetables with spices and a light spray of oil. Bake everything at 400°F for 20 mins.
Massage the kale leaves with olive oil. Whisk together all vinaigrette ingredients in a bowl.

As I made this salad, nothing went to waste; I couldn’t resist its incredible freshness and flavor. Save all the remaining juices from the citrus fruits; they will create a vinaigrette that elevates your salad to a whole new level.

✨Ingredients:
* Assorted citrus fruits (oranges, grapefruits, blood oranges, etc.)
* Roasted pistachios
* Roasted golden beets
* Endives
* Arugula

Honey Lemon Vinaigrette:
* 1/2 shallot (diced)
* Juice of 1 lemon +  remaining citrus fruit juice
* 1.5 tbsp honey
* 1.5 tsp dijon mustard
* Salt and pepper to taste
* 1/3 cup extra virgin olive oil
* Parmesan cheese (as much as your heart desires)

✨Steps:
* Roast the Golden Beets: Peel them, wrap in foil, and roast for about 30-40 minutes (depending on the size) at 375°F.
* Supreme the Citrus Fruits: Carefully peel and section the citrus fruits, removing any pith and seeds.
* Prepare the Salad Base: Arrange the supremely citrus fruits at the bottom of a plate.
* Roast the Pistachios: Lightly roast the pistachios with a spray of olive oil until they become fragrant and slightly browned. Let them cool.
* Make the Honey Lemon Vinaigrette: Combine diced shallot, lemon juice, all the remaining citrus fruit juices, honey, Dijon mustard, salt, pepper, and as much Parmesan as you like. Add the extra virgin olive oil and blend until the dressing is emulsified.

Ingredients:
* 1 NY Strip Steak or Filet (Grass-fed)
* 1 tsp chili powder
* 1 tsp onion powder
* 1 tsp garlic powder
* Pinch of salt and black pepper
* Shredded mozzarella, provolone, or your preferred cheese
* For Mayo Sauce: Equal parts Mayo and Classic Dijon whole grain mustard, Salt, Pepper, squeeze of 🍋
* Your favorite bread
Chimichurri: 🍃
* 1 cup fresh chopped parsley
* 2 minced garlic cloves
* 1 finely chopped shallot
* 1/2 lemon zest and juice
* 1/2 tsp salt
* Black pepper
* 1 tbsp dried oregano
* 2 tbsp dried basil
* Dash of red pepper flakes
* 1/3 cup red wine vinegar
* 3/4 cup extra virgin olive oil
* (Optional) A hint of habanero or red chili pepper for some heat

Instructions:
* Ensure your steak is at room temperature. Season both sides with chili powder, onion powder, garlic powder, salt, and pepper.
* Prepare the Chimichurri sauce. Chop parsley, mince garlic, finely chop shallot, zest lemon and juice. Mix with oregano, basil, red pepper, red wine vinegar, salt, black pepper, and olive oil. Add fresh peppers if you like it spicy.
* Heat a pan, add oil, and place the seasoned steak. Let it sizzle till edges crisp. Flip and cook to your liking (about 4-5 mins per side for medium). Baste with butter and garlic. Rest for 5-10 mins, then slice against the grain.
* Spread mayo sauce on bread, add steak slices, and cheese. Toast until cheese melts.
* Drizzle Chimichurri sauce, top with chips, and dip as you enjoy every bite!

Chimichurri: 🍃
* 1 cup fresh chopped parsley
* 2 minced garlic cloves
* 1 finely chopped shallot
* 1/2 lemon zest and juice
* 1/2 tsp salt
* Black pepper
* 1 tbsp dried oregano
* 2 tbsp dried basil
* Dash of red pepper flakes
* 1/3 cup red wine vinegar
* 3/4 cup extra virgin olive oil
* (Optional) A hint of habanero or red chili pepper for some heat

Instructions:
* Ensure your steak is at room temperature. Season both sides with chili powder, onion powder, garlic powder, salt, and pepper.
* Prepare the Chimichurri sauce. Chop parsley, mince garlic, finely chop shallot, zest lemon and juice. Mix with oregano, basil, red pepper, red wine vinegar, salt, black pepper, and olive oil. Add fresh peppers if you like it spicy.
* Heat a pan, add oil, and place the seasoned steak. Let it sizzle till edges crisp. Flip and cook to your liking (about 4-5 mins per side for medium). Baste with butter and garlic. Rest for 5-10 mins, then slice against the grain.
* Spread mayo sauce on bread, add steak slices, and cheese. Toast until cheese melts.
* Drizzle Chimichurri sauce, top with chips, and dip as you enjoy every bite!

Cucumber Tomato Salad:
* 2 tbsp Olive oil
* 1 tbsp Red wine vinegar
* Salt
* Pepper
* Cucumber
* Grape tomatoes
* Fresh mint
Mint Yogurt Sauce:
* 1 cup Greek Yogurt
* 2 tsp Dried mint
* 1/2 tsp Salt
* Juice of 1 Lime

* On a sheet pan lined with parchment paper for easy cleanup, arrange the veggies and marinated chicken. Bake at 400°F for 20 mins. Season the veggies with salt, pepper, the same blend you used for the chicken, garlic powder, and spray with oil.
* Prepare the mint yogurt sauce.
* Make the salad.
* Assemble this colorful meal or pack it into containers for a convenient option for your next meal.

* 1 cup ricotta cheese
* 1/2 cup grated white cheddar 🧀
* 1/4 cup fresh herbs 🌱
* 1/2 tsp lemon zest 🍋
* Parmigiano Reggiano 🧀
Steps:
* Preheat oven to 400°F.
* Line turkey bacon on a sheet pan and bake for 10 minutes, flip, and bake for an additional 5 minutes.
* Line a large baking sheet with parchment paper.
* In a bowl, combine flour, baking powder, sugar, salt, and black pepper.

Copycat recipe of Carbone’s Spicy Rigatoni but better because it’s gluten free, high in protein and low in net carbs but still delicious because we kept the original sauce. For the perfect texture (using chickpea pasta), cook it in boiling water for 3 mins and In the sauce for 4 mins. 

Ingredients:
* 1/2 lb Banza pasta
* 1 shallot
* 3 garlic cloves (minced)
* 2 tbsp Calabrian chili peppers or paste 
* 6 ounces tomato paste
* 1/2 cup vodka ( you can skip this)
* 1 cup heavy cream
* 1/2 tsp honey 
* 1/4 cup pasta water
* 1 tbsp butter
* 1 tbsp freshly grated Parmigiano Reggiano cheese
* Salt and pepper to taste
Steps:
Boil salted water but don’t add the pasta yet.
Heat oil in a pan, add shallot, cook ~2 mins.
Stir in garlic and Calabrian chili peppers, cook ~ 1 min.
Cook pasta in boiling salted water ~ 3 mins.
Add tomato paste, cook ~ 2 mins, then pour in vodka and cook ~ 1 min.
Add heavy cream, mix well.
Add pasta cooking water, pasta, salt, and pepper.
Stir in butter, cheese, check seasoning.
Fold pasta, let it absorb the sauce ~ 4 mins.

Hot Honey Baked Brie 🌶️🍯🫕
A delicious and easy appetizer.

Ingredients:
* Round sourdough 
* Brie
* 3 tbsp Honey
* 1 tsp chili flakes
* 2 tbsp Water
* Juice and zest of 2 oranges
* 1 cup Cranberries
* Walnuts
* Thyme
* Oregano + Olive Oil

Cook cranberries with honey, chili flakes, water, orange juice, and zest for about 20 mins. Let it sit for 10 mins.
Cut a hole in the bread to fit the Brie. Brush with olive oil and oregano all over. Score the top of the Brie rind by cutting crisscross lines. Add the sauce to the bottom, place Brie on top, and layer the top with sauce, walnuts, and thyme.
Bake at 375 F for 20 mins and enjoy! Top with more hot honey!

* 3 tbsp Honey
* 1 tsp chili flakes
* 2 tbsp Water
* Juice and zest of 2 oranges
* 1 cup Cranberries
* Walnuts
* Thyme
* Oregano + Olive Oil

Cook cranberries with honey, chili flakes, water, orange juice, and zest for about 20 mins. Let it sit for 10 mins.
Cut a hole in the bread to fit the Brie. Brush with olive oil and oregano all over. Score the top of the Brie rind by cutting crisscross lines. Add the sauce to the bottom, place Brie on top, and layer the top with sauce, walnuts, and thyme.
Bake at 375 F for 20 mins and enjoy! Top with more hot honey!

* 1/2 tsp salt
* 2 tsp vanilla extract
* 2 eggs (at room temperature)
* 2/3 cup gluten-free all purpose flour ( Simple Mills) or AP flour 
* Whipped cream 
* Strawberries
* M&M’s

Preheat your oven to 350°F. Grease your mini muffin pan with softened butter (at room temperature).
In a large mixing bowl, melt the butter and dark chocolate completely, and let it cool. 
Sift the cocoa powder, sugar, and add one egg at a time, mixing until combined (avoid over-mixing).
Sift the flour and mix until there are no lumps (avoid over-mixing). 
Scoop 2-3 tablespoons into each mini muffin pan and bake for 18 minutes.
Turn off the oven and remove them after 2 minutes. Allow them to cool in the pan for 20 minutes, then transfer them to a cooling rack to cool completely.
Decorate each brownie bite with cream to resemble Santa’s beard. Top with a strawberry, removing the stem, and pipe a small dollop of cream on the tip of the strawberry to create the hat and an M&M for the nose. ENJOY 😉

* 2 puff pastry sheets
* Bamboo picks
* 1 whole garlic
* 1 stick unsalted butter
* Parsley
* Salt
* 2 tbsp Parmigiano Reggiano
* 2 tbsp Mozzarella
* 1 egg white + 1 tsp water

Cover garlic in olive oil, in a baking dish with a lid and bake at 250°F for an hour (or wrap in foil to skip keeping garlic olive oil). Blend confit garlic with salt, parsley, and butter until silky smooth.
Spread the garlic butter on a puff pastry sheet (add flour underneath to avoid stickiness). Sprinkle Parmigiano Reggiano and mozzarella. Seal with another puff pastry sheet. Cut strips, fold for a Christmas tree shape, and insert a skewer. Place on a sheet pan with parchment paper. Brush with an egg wash glaze (1 egg + 1 tsp water).

Instructions:
- Preheat the oven to 425°F.
- In a blender or using an electric hand mixer, combine flour, sugar, nutmeg, milk and eggs until the mixture is smooth. Cover the batter with a clean kitchen towel and let it rest for 30 minutes.
- Just before the batter finishes resting, place the cast iron in the oven for 2 minutes.
- Remove the cast iron, add butter, and return it to the oven for 1 minute, till butter is melted.
- Add the batter to the pan, return the pan to the oven, and bake for 20 minutes until the pancake is puffed and golden.
- Create your homemade whipped cream by whipping cold heavy cream, sugar, and vanilla together using an electric mixer ( let it chill in fridge till ready to serve) or opt for store-bought whipped cream. 
- Top Dutch Baby with powdered sugar and berries. And a side of organic honey.

For the Tortellini Soup 🍋🍲

* Olive oil + Butter
* 1/2 onion
* 2 celery stalks
* 2 carrots
* 2 garlic cloves
* Salt, black pepper, Italian seasoning
* 1 can tomato sauce
* 1/2 cup dry white wine
* 1/2 cup flour
* 6 cups Chicken or Veg broth
* 8 oz Cheese tortellini
* 1 cup heavy cream or half/half
* Handful chopped spinach
* Parmesan grated + rind
* Parsley
* 1 1/2 lemons, juiced

👩🏻‍🍳⏲️
Form tiny meatballs: Combine all the ingredients and form mini meatballs. Roll in flour ( prevents falling apart) and fry for 4 mins per side. Set aside.

For the soup: In the same pot, sauté onion, celery, and carrot in olive oil and butter. Add garlic, deglaze with white wine, and stir in flour.

Add tomato sauce, gradually pour in broth, and stir to combine. Simmer, adding a Parmesan rind, then reduce heat to low and simmer for 15 mins.

Remove the rind, add cream, tortellini, and spinach. Cook until tortellini is al dente, per package directions. Add lemon juice.

Add meatballs to the soup, let it all cook for 8 mins.

Serve with fresh parsley, lemon zest, and Parmesan. Dunk with bread for a perfect, satisfying meal!

* 1/2 lb Banza pasta
* 1 shallot
* 3 garlic cloves (minced)
* 2 tbsp Calabrian chili peppers or paste 
* 6 ounces tomato paste
* 1/2 cup vodka ( you can skip this)
* 1 cup heavy cream
* 1/2 tsp honey 
* 1/4 cup pasta water
* 1 tbsp butter
* 1 tbsp freshly grated parmesan cheese
* Salt and pepper to taste
Steps:
Boil salted water but don’t add the pasta yet.
Heat oil in a pan, add shallot, cook ~2 mins.
Stir in garlic and Calabrian chili peppers, cook ~ 1 min.

Let’s make a dreamy hot chocolate, done the European way (don’t ask the Grinch about his sources).

Ingredients for a Grinch-approved hot chocolate 
1/2 cup cream
1/2 cup milk
1 espresso shot (the Grinch’s secret ingredient)
A whole dark chocolate bar or milk (or both – the Grinch is feeling generous)
2 tsp brown sugar 
1 tbsp cocoa powder 
Whipped Cream 

In a saucepan(or whatever pan you’ve got, the Grinch isn’t picky), blend cream and milk, sprinkle in sugar, and sneak in that espresso shot. Let it simmer, not boiling. 
Sprinkle in cocoa powder and break up that chocolate bar, whisk away until it’s velvety and silky smooth. 
Pour it into your favorite holiday mug, and crown it with a cloud of whipped cream. If you’re feeling extra indulgent, shave some chocolate on top. 
Enjoy this dreamy cup of cocoa that even the Grinch couldn’t resist. It might just thaw a little piece of that icy heart. Or not. 🍫💚

3/4 tsp Salt and pepper
2 Cloves garlic 🧄 
2 Tbsp Arrowroot starch or cornstarch
2 tsp Coconut amino acids
2 tsp Worcestershire sauce
1 Tbsp Dijon mustard
4 Cups Veggie broth
1 lb Baby potatoes
2 Cans White beans, drained and rinsed
2 Cups Milk (can sub for dairy-free like almond milk)
Fresh parsley
Oyster mushrooms

Melt butter in a big pot. Toss in the diced onion, sauté a bit. Add mushrooms, thyme, rosemary, salt and pepper. Cook until mushrooms are golden brown. Toss in garlic and cook a bit more. Sprinkle in the cornstarch and stir. Add amino acid, Worcestershire sauce, and mustard. Stir again. Pour in the veggie broth and potatoes, bring it to a boil. Once it’s bubbling, lower the heat and let it simmer (no lid) ~ 20 mins until the potatoes are tender. Toss in the beans and milk. Simmer (lid off) ~ 10 mins until everything’s tender and the soup’s thickened (it’ll keep thickening as it chills). Adjust the seasoning as needed – more amino acids or salt. For the glazed oyster mushrooms, toss ‘em in a pan until they get crispy and release their water ~ 2 mins. Tzatziki:
* 500 grams of Labneh
* 1 clove garlic
* 1 Persian cucumber, grated and excess water drained
* 2 tbsp fresh dill
* Juice of 1/2 lemon
* 1/4 cup extra virgin olive oil
* Salt to taste

Instructions:
* Use a mandolin or slice the zucchini and eggplant into thin chips.
* Cut the cheese into small cubes and coat them with the flour mix. Lightly fry them for 1-2 minute.
* Prepare two bowls: one for the flour mix and another for the batter mix.
* Dip the chips into the flour mix and then into the batter.
* Fry chips for about 2 minutes or until they turn golden, ensuring the oil is hot enough at around 350°F.
